Journeyman Meat Cutter

On a daily basis prepare meats and fowls by cutting, packing, wrapping and pricing same for retail sales. Also required to service customers, maintain display cases, prepare orders, stock products and properly rotates back stock in freezer and chill. Is responsible for cleanliness and sanitation of prep room, storage room, equipment and tools.

ESSENTIAL DUTIES:

· Participates in the processing of meats and fowl into retail cuts.

· Safely operates department equipment including slicer, grinder, scale, band saw, knife, wrapper and cuber.

· Ability to maintain a knife grip in order to cut primal and sub-primal to specification.

· Ability to withstand for long periods a working environment of 40°F or less.

· Ensures meat and poultry is fresh, handled appropriately, stocked, rotated, and merchandised to present a pleasing image for optimum traffic flow.

· Orders and stocks prepackaged deli items and frozen food products that fall under the meat department.

· Ensures proper inventory control and product rotation to maximize product freshness and availability, while minimizing waste.

· Assists customers with special requests and answers questions about our meat products and services. Assists in conducting physical inventory of all meat and poultry products on hand as required by store operations.

Education:

• High school or equivalent (Preferred)

Experience:

• Meat Cutting in a retail setting (Grocery Store): 2 years (Preferred)
